Help me make a casserole asap!

Dinner is looming. I have leftover pork loin (already chopped in cubes), and both regular potatoes and sweet potatoes. I can make a gf cream soup base with rice milk and gf flour. It has to be free of the usual suspects, and also legumes.

Please help me turn this into dinner!

ETA: I have rice, quinoa, etc. It doesn't have to contain potatoes. . . I've got onions and lots of other stuff. Just start suggesting

Tell us how it went? I am horrible about improvising dinners, they either turn out boring or really weird (and not great).

Not bad. I made a roux with rice flour, rice milk, chicken broth and palm shortening. To that I added my cubed pork, sauteed onions, cooked potatoes (cubed and boiled in another pot) and a can of green chiles. I added cumin, coriander, salt and pepper to all of that. Served the whole tasty mess over quinoa. It was pretty good. Even the baby gobbled it up: If I could eat beans, I would have tossed in a can of black beans. It was kind of like chili verde. Only creamy. With no beans. So not really.
