Making Vinegar

I would like to start making my own vinegar, but can't seem to find a recipe. We use quite a bit of it, mainly for washing non organic veggies (to get rid of pesticides and toxins) and cleaning.
I just found out that our vinegar is preserved with sulphur dioxide , here I thought vinegar was a preservative?!?
