I am going to be making cookies for a wedding this Saturday. Cookies for weddings may or may not be a peculiarly western Pennsylvanian tradition as I know when we were planning out wedding, DH was stumped by the fact that you need cookies at a wedding. (He is not from PA but he roots for the Steelers so we let him stay.)
Just in case you are thinking, like he once did, cookies for a wedding??
Everyone is bringing some things, it's not like I am baking for the whole crowd.
I thought I would take snickerdoodles, gobs, and lemon bars, which are all easy yet have a sort of middle-of-the-road fanciness to them. In between chocolate chip and lady locks on the cookie fanciness scale.
I don't really want to spend all Friday baking so they are all fresh.
How far ahead do you think is too far ahead? Should I bother freezing if I make the snickerdoodles today or tomorrow? What about the gobs? I figured I would make the cake part ahead of time and just assemble them either Friday or maybe Saturday morning. Should I bother freezing the cake part if I make them today or tomorrow?
The lemon bars I will just do Friday, they are easy and just look more elegant than they are once you cut them up and put them in little papers.
