What to do with lentils?

I just made a full pot of lentils. I intended to make a salad with it, but the dressing I have just does not taste right with lentils.

I'm hoping to use them for dinner now. My (actually DH's..) only requirements are that it involves meat and isn't a soup.

Anyone have any delicious recipes for me?

I like to do a stir-fry type of thing. Quick sautee some vegetables, add in the lentils until they warm. Top with a nut and drizzle some yogurt. A little chopped dried fruit adds a nice contrast. I make this vegetarian, but you could easily add meat.

Stuff them in some enchiladas with seasoning and cheese. Serve with rice. I made this once in a pinch because I didn't have meat, and they ended up being a hit. I didn't use any meat, and to be honest didn't miss it, but it could be added.

Lentils are great with sausage. You can brown the sausage, sautee vegetables (onions, garlic, celery, carrots, green beans, peas, whatever you like) and add the cooked lentils. This could be served over rice...yummy!
