I would make Swimming Rama.
First, start some rice.
Then take one can of coconut milk and a can full of water and boil some chicken in it (enough for your family---we share one breast or two thighs among two adults and a 4-yo and 1-yo). When the chicken is done, remove it to cool.
To the coconut milk, add 1/4C fish sauce, 1/3C peanut butter (smooth or chunky---you decide), 2Tbsp sugar, and 2tsp red curry paste. Whisk until smooth, bring to a boil, and let the flavors meld a bit.
Meanwhile, steam the spinach until just wilted. With this much spinach, it will take a few batches.
Slice or shred the chicken. On a serving platter or on each plate layer rice, spinach (lots!), chicken, then spoon copious quantities of sauce over the whole thing.
We make this at least twice a month and I just can't get enough!
