My DD (age 4) can not eat eggs and dairy. She also has a bunch of other allergies but I mostly need help with the eggs. I am looking for an egg free/dairy free pancake recipe. Also, it would be WONDERFUL if it was also gluten free. My son and I are gluten free. I have a great gluten free pancake recipe but it calls for eggs. I've tried using egg replacer and ground flax seeds. Nasty and slimy pancakes were made with that experiment. I haven't made muffins in weeks. My kids keep begging for them but I can not figure out recipes that are gluten free and egg free. Nuts are also out, as well as, garbanzo/bean flours. Any suggestions. Please help.

I've done ef/df/gf pancakes with gelatin as an egg replacer. I've also used pancake mixes that called for eggs and just left them out altogether. They were flatter, but still edible. For gelatin, I use 1 T powdered plain gelatin, mixed with 1 T cold water and then, add 2 T boiling water and stir until frothy and dissolved. I don't like to use more than 1 egg this way, sometimes 2. It just depends. You don't want it to be too gummy. You can also use sparkling water as your liquid which gives the batter more lift, too.

I have a millet pancake recipe and a buckwheat pancake recipe (the latter is better, I think, but DS prefers the millet for some reason). It's on my blog: www.kathysrecipebox.com. Both are dairy, egg, gluten (and corn and soy) free.
