a breakfast bar. I would love to bake a pan full of healthy yummy goodness to have in the morning. Something packed with nutrition and good taste, and kid-friendly. Whatcha got, Mammas?:

This is one I like. It came out a little more cake-like than I'd hoped, I was looking for a chewy bar, but it is really yummy.

1 large egg white
1/2 c. old-fashioned oats
1/2 c. dried blueberries
1/2 c. sliced almonds
1/4 t. salt
1/2 c. natural peanut butter
12 c. brown sugar
3 T. vegetable oil
1/2 t. cinnamon

Preheat oven to 300*, line 8 in. pan with parchment.

Combine oats, blueberries and almonds in a bowl.

In a saucepan, whisk oil, peanut butter, brown sugar, cinnamon, salt and 1 T. water over low heat until sugar is dissolved. Let cool a little, whisk in egg white. Pour over oats mixture, stir. Spread evenly in pan.
Bake until top is firm, about 30 min. Let cool 10 minutes and cut into bars.

Thanks! Anyone else? I saw this on J+K+8 and thought it was a great idea.....
