Favorite zucchini recipes??

I was out hanging clothes on my line today and water my garden and noticed I have some zucchini almost ready to pick.. wondering if you would share your favorite recipes, since I'm not sure what I'm going to do with all that my garden produces!! (except maybe LOTS of zucchini bread!! YUMMY!! Feel free to share your recipes for that, too) kid friendly recipes especially appreciated!!

Our current favorite way is roasted with onions. I chunk them and toss with olive oil, cajun seasoning, salt and pepper.

I also like them stir fried with onions. Top with honey and ground ginger when they're almost done.

I have a few other recipes but haven't tried them yet.

Our favorite ways to eat it are:

sauteed with butter or olive oil and salt and pepper. I will never steam or boil zuch. again!

Sliced (like cheese) and grilled outside. You can freeze zuch. in slices and grill it in the winter and it is a yummy treat. No special preppring, just slice it raw, put it in freezer bags and your good to go.

Kabobs with onion, mushroom, zuch, and beef.

Shredded in the cheese grater and put in quesadillas with chicken.

I like to turn my blender on low and add a chunks of zuch., onion, bell pepper, whatever and let it dice and then add this to eggs as a scramble, fritata, omelet, etc.

Enjoy! We just picked our first zuch. of the season today!! And our first summer squash and tomato too!

My fav(exceptionally nutritious):

Stir fry with portobello mushroom slices and onions.

In pan, add 1 tbsp butter, 1 tbsp extra virgin olive oil (to get extra crispy).
Put mushrooms and onions in first.
Add zucchini after about 5 minutes of cooking mushrooms and onions.
Stir fry until the zucchini begins to brown a little, then add about 1 tbsp soy sauce (more or less if you like). Stir it around for another 2-5 minutes (less if you like crispness, more if you like softness).

Another good one (very unhealthy):

Fried zucchini:

Slice into pieces of a desirable size. The smaller the pieces are, the more surfaces that will exposed for battering and frying.

Crack an egg into a bowl and whisk it like scrambled eggs. Put cut zucchini into bowl and coat with egg.

Get ziploc bag and put in 1 cup of flour per whole zucchini. For added flavor, throw in 1 tbsp garlic, creole/cajun seasoning, or cayenne pepper.
Zip up bag and shake it all around once transferring egg-coated zucchini into it. The pieces should be well coated with flour before frying.

Heat frying pan to medium- high heat with oil and put in zucchini (or deep fry if you have a deep fryer, it turns out waaaaay better). Fry until golden brown. If using frying pan, turn over once bottom side is golden.

Zucchini in sour cream sauce (OK, not low fat, but yummy):

Grate/shred zucchini. Steam until just tender. Drain really well (I put into collander and press down). Return to pan (off heat but warm) and add butter, sour cream, salt & pepper to taste.

Zucchini & Potato pancakes:

Grate 2 zucchini, 2 potatoes, 1/2 an onion. Press out all liquid (squeeze in towel or press into collandar). Add 2 T flour, 2 eggs, salt & pepper. Fry in skillet. (I prefer in butter, non-stick would be healthier).

Right now I am making stewed tomatoes and zucchini. It is super simple, but I love it : Just take a small can of diced tomatoes and throw it in a decent size sauce pan. Toss in 4 c sliced zukes, small chopped onion, some garlic and 1 Tbl butter. Turn heat to med-med/high and cook until zukes are done. Salt and pepper to taste.

Slice zucchs in bottom of 9x13 pan and add whatever seasonings you like. I add sliced onions and then use Italian seasonings, sea salt, pepper and garlic. Add seasoned, browned ground turkey and a can of stewed or diced tomatos. Sprinkle with cheese if desired. Bake until it's the texture you like your zucchini. We like it!

my favorite chicken curry recipe has zucchini in it. I hand this out to everyone, it's so yummy and relatively quick too!

Our favorite recipe for zucchini, is to actually make pickles out of them. Made 7 pints today. Here is my recipe.

I love zucchini parmesan sandwihes-

dredge thin slices of your zucchini in seasoned cornmeal (I use garlic powder, parsley, oregano and basil), and bake on a baking sheet for about 10-15 minutes at about 400*, then put some tomato sauce and a bit of low-fat mozzarella and a sprinkle of parmesan (real stuff, not that icky powder in a canister) and broil it for a couple minutes

put it on a nice crusty whole-wheat roll with some red onion, black olives, slices mushrooms (think pizza toppings you like) and some crispy romaine leaves

Disappearing zucchini orzo and zucchini beef bake (I found that recipe on here): slices of zucchini layered with canneli beans, mushrooms, browned ground beef, tomato sauce and mozzerella cheese in a casserole dish, bake at 350 for ~30 minutes or until the cheese is all melted

Cavacitas


2 large zukes, chopped
6 tomatoes, chopped
4-8 mushrooms, diced
1 small onion, minced
3 cloves crushed garlic (optional)
sea salt
3 tbls olive oil or butter
shredded mozarella or your fav cheese

Turn burner to medium. Saute onion and mushrooms in oil/butter until soft. Add garlic and saute a minute more. Don't let the garlic burn!

Add zukes, tomatoes and salt. Cover, bring to a simmer, reduce heat and cook for 15 minutes or until tomatoes have dissolved into a nice juice.

Ladle into a bowl and top with shredded cheese. YUM!:

You need some sweet recipes in here!! I just made this Chocolate Zucchini cake today with a few modifications (soaked whole wheat flour, coconut oil, rapadura. It is (soon to be was) really really good Read the reviews on the site for other ideas on how people have modified it (ie used part applesauce for the oil, frosted it, etc.) It was great without frosting for us!

My favorite way to eat is to saute it with onions with olive oil, salt, ground black pepper, and red pepper flakes. The red pepper flakes gives it a nice kick.
