I'm pretty sure this will work..
mainly I was trying to use up some things before they go bad..
I have a little leftover Jambalaya - super spicy rice with chopped sausage..
I added a medium tomato that was slightly bruised (chopped)
leftover chopped onion (I made a salmon spread, and had chopped too much earlier today)
leftover chopped celery (same)
can of kidney beans (drained)
two cans of chicken broth
1 slightly bruised large red pepper (chopped)
I don't know what spices to add? The jambalaya was very spicy to being with, so I am not sure what would make it taste more like tortilla soup?
Also, what cheese do you suggest? I have shredded mozzarella that needs to be used up, but I have only ever seen tortilla soup with orange cheese.. I have cheddar in the fridge, but I would have to shread it, and the mozzarella being used up is really more of a priority..

Any suggestions? I was going to pepper to taste, but that is all I can think of..
