Tortilla soup from leftover Jambalaya?

I'm pretty sure this will work..

mainly I was trying to use up some things before they go bad..

I have a little leftover Jambalaya - super spicy rice with chopped sausage..

I added a medium tomato that was slightly bruised (chopped)
leftover chopped onion (I made a salmon spread, and had chopped too much earlier today)
leftover chopped celery (same)
can of kidney beans (drained)
two cans of chicken broth
1 slightly bruised large red pepper (chopped)

I don't know what spices to add? The jambalaya was very spicy to being with, so I am not sure what would make it taste more like tortilla soup?

Also, what cheese do you suggest? I have shredded mozzarella that needs to be used up, but I have only ever seen tortilla soup with orange cheese.. I have cheddar in the fridge, but I would have to shread it, and the mozzarella being used up is really more of a priority..

I have tortillas, also..

Any suggestions? I was going to pepper to taste, but that is all I can think of..

I know tortilla soup usually has chili powder. I would add garlic and fresh cilantro if you had it.

I think mozzarella is fine if this is more of a use up leftovers dinner. I normally use a mexican queso cheese for tortilla soup.

I am pretty sure there was garlic and cilantro in teh jambalaya.. I did add a sprinkling of chili powder and pepper though.. it looks great, and smells fantastic.. I would say it looks like tortilla soup I have ordered in restaurants, just a bit more vegetablier.. which is fine with me!

It sounds good. I love homemade tortilla soup. It's 100 degrees here though and way to hot for soup.
