I don't know if you're wanting tips, but I just thought I'd throw out there what we do in that situation. For ground beef or buffalo (comes in small, white, plastic bag type packages) we thaw in a bowl of hot water and change the water 2 or 3 times whenever it cools. After about a half hour or less it is thawed and ready to cook or whatever. For chicken we just toss it in the oven frozen and cook it until its done. That last one is an obvious one, I'm sure, but I wanted to mention other types of meat than just red, but the only other kind we eat is chicken so I don't have anymore "tips" than just those.
