Salad Dressings

We are SWIMMING in greens right now and I am running out of dressing ideas.

What's your favorite simple salad dressing???

We have a lot of greens right now, too. This is probably my favorite dressing at the moment:

2 Tbsp. rice wine vinegar (or balsamic vinegar, but I prefer RW)
1/4 tsp. mustard (stoneground or dijon)
1 1/2 Tbsp. maple syrup
1/2 tsp. soy sauce or Bragg's Liquid Aminos
1 tsp. toasted sesame oil
1 1/2 Tbsp. EV olive oil
small chunk of ginger, peeled and minced
pinch of salt and pepper (I never use)

Combine all ingredient with a fork until well blended. :

Olive oil and balsalmic vineger (simple and delicious, especially with blue cheese and apples!)

Yum - yeah, I've been doing balsamic & olive oil with currry and maple forever - we all love it - but it's time to branch out!
I could drink balsamic straight from the bottle!

If you dig, you'll find this subject comes up quite a bit.

Blue cheese:
1 part mayo
1 part sour cream
1 part yogurt
1 part crumbled blue cheese
1 part fresh herbs (parsley, chives, tarragon, whatever), optional
1 clove garlic
a splash of white vinegar

If you need to, you can also do 2 parts either sr. cream or yogurt instead of 1 of each. Most of the time I just wing it now.

My basic go-to is honey-dijon vinaigrette... honey, dijon, oil and w.w. vinegar. I've also made it with pomegranate molasses instead of honey - goes great with lamb.

We prefer "creamy" dressings here, so I toss some seasonings together with some creamed up cultured cottage cheese and just enough butter milk or plain kefir to make it runny enough for salad dressing. Sometimes I'll add either Romano/Parmesan cheese for flavor and thickener.

Seasons I use generally, all dried so I can grind up into a powder:

Sea salt
white pepper
cilantro
dill
marjoram
chives
garlic
onion
lemon thyme
nutritional yeast

balsamic vinegar, olive oil, a bit of dijon mustard and some coarse salt

white wine vinegar, olive oil, tarragon, a little minced garlic and dijon mustard

I've also read a recipe where you boil a few garlic cloves in their peels and then mush them into the dressing - this is supposed to give you the garlic taste without the pungency. I love garlic.

I like plain lemon juice with raspberry puree and safflower oil, with a pinch of sea salt and fresh pepper.

White French Tarragon Dressing:


* 3 tablespoons fresh tarragon minced
* 4 tablespoons WHITE balsamic vinegar
* 2-3 tablespoons good honey
* 2 cloves fresh garlic minced
* 1 tablespoon dijon mustard or spicy mustard
* 1-1/2 tablespoon mayonnaise
* 2 tablespoons fresh lemon juice
* 1/2 cup olive oil
* 1 teaspoon of kosher salt and 1/2 teaspoon of fresh cracked pepper

1. In bowl, add all of the following: tarragon, garlic, salt and pepper, mayonnaise, mustard, honey, vinegar and lemon juice.
2. Whisk till combined.
3. Slowly , really slowly drizzle olive oil while continuing to whisk to create an emulsion.
4. Taste test your salad dressing, add a little more honey if it has too much of a bite for your tastes, or more lemon juice if you need more, etc.

I love this....
