Veg. garden/watering question...

I'm considering put in a decent size garden for the fall/winter and I've only had experience putting one one winter garden in the past. I was hoping someone could suggest veggies that only require a small or moderate amount of watering as opposed to constant watering. I'm in N. Texas and our fall/winter is pretty mild.

I would think kale and carrots would be good options. Maybe even spinach and turnips, radishes.
