what to do with lots of pork fat

About twice a year we purchase a quarter pork from an organic, pasture farmer and included, of course, is a lot of plain pork fat (unsalted, unsmoked). I already save and render the leaf lard for pie crusts so I have no need for more there. So what to do with all this lovely fat I've accumulated? I'd hate to see it go to the chickens or dog .

I would still render it and use it for mayo, cooking oil, in refried beans, etc.

I would render it and use it for frying all kinds of stuff- eggs- veggies- whatever you fry that is savory.

Use it in place of cooking oil. There are very few things that you can't use lard in... salad dressing being one that pops to mind. But it can replace butter, olive oil, coconut oil, etc., in a variety of recipes/uses, from frying your morning eggs to cookies.

Barring that, you could always send it my way.

Thanks! You know, sometimes the ol' brain just doesn't work well. I am so into the habit of cooking with butter that I never think of using lard except for green beans! Duh. I'll render and get cooking!

If you get raw butter, then yeah, I'd keep the butter raw (unheated) and use lard for cooked stuff.

You can also use it (not rendered) for adding to home-made sausage, if you have a meat grinder.
