This is what we're planning:
Breakfast: Toasted Millet Bread, Yogurt Cheese, Fresh Strawberries and Raspberries, Peppermint Tisane
Lunch: Tom Yum Gung, Grilled Shiitake Mushroom Salad, Kombucha
Supper: Pulled Pork, Cabbage Salad, Salad Turnips
What's on your menu?

Well, I'm at work today, so I can only speak for myself. My husband usually gets the kids their meals during the week (unless I've been super productive and have everything ready to go. Yeah, right!).

Anyway, for me:

Breakfast - leftover Thai coconut chicken soup
Lunch - Greek yogurt w/ berries and honey and some ginger kefir soda
Dinner - not sure. I really want to try the lettuce wrapped salmon that's in EFLF, but I'll have to ask my h to work on that one.

I also brought some fruit leather for a snack. I need to get some lemon juice to make hummus - the garbanzos are all soaked and ready to go, and I'd rather bring that than the fruit leather.

The kids will probably have eggs and sausage for breakfast, leftover grassfed hotdogs w/ fruit for lunch and then whatever we end up having for dinner.

BREAKFAST: 1 glass raw milk, apricots, 2 gluten free berry waffles with butter and raw honey

Lunch:Turkey burger wrapped in lettuce with raw cheddar, tomato, and apple. also a side salad with olive oil dressing, avocado and tomato.

snack:raw cheddar,bluberries,2 brazil nuts, and nettles tea 2 small pickles

Dinner:Mac and cheese with rice noodles, pickles,sauerkraut, and arugula salad.

Ok who else????

Oh ys i had some organic dark chocolatefilled with gogi berries too

We had eggs and potatos for breakfast...

Tonight we're going to a new restaraunt called Harvest. Its all local, organic!!! Mmmmm.....local grass fed steak!

For breakfast i had a smoothie (yogurt, frozen blueberries, frozen mango, 1 banana, a little raw yogurt, and a little ground flax seed), and a hard cooked egg.

For lunch I had a tomato sandwich. Not exactly tf, but the bread was baked locally and they grind their flour daily.

For dinner we had a roasted chicken and asparagus soup.

Breakfast - boiled duck eggs
Lunch - peanut butter on sourdough
Supper - liver and onions, salad, potatoes roasted in duck fat, carrot sticks from the garden, and the first batch of garden peas!

Breakfast: Millet porridge with apples, cinnamon, honey and butter plus 2 fried eggs and kombucha
Snack: Celery with almond butter
Lunch: Chicken soup and sauerkraut
Snack: fresh pressed carrot, celery, beet and parsley juice
Dinner: Ground lamb curry, brown basmati rice, broccoli, Veggie Delite salad (fermented beets, cabbage, etc) and a peach for dessert

Lunch: German Meatballs with Gravy and Southern style Hashbrowns
Dinner: Same Meatballs with parboiled grilled Potatoes for me, T-Bone Steak and Smoked Pork Chops for the boys (31, 7 and 2)

yesterday-
breakfast:
me: 2 fried eggs on mixed bitter greens
ds1: scrambled eggs
ds2: homemade ice cream with raw cream, raw milk, raw honey, pastured eggs

lunch:
me: local mozzarella, homegrown basil, and homegrown tomatoes and ?
boys: shredded wheat with raw milk (not TF, I guess, but rare for us)

snack: strawberries and raw cream
(boys also shared an odwalla superfood and organic fruit strips while we were out)

dinner (huge hurry):
me: mixed greens with local, raw feta, local pastured hard boiled egg, gogi berries, crispy almonds, and simple dressing
boys: pb and local honey-"grown" and harvested by my mom - on sprouted or sourdough bread

snack: local farm mozzarella

today-
breakfast:
me: hard boiled eggs, whey with lemon to drink
boys: yogurt and berries

lunch: lasagna (with grass-fed, local meat and homegrown squash as the noodles...yum) and a bowl of flash sauteed zucchini noodles with garlic, evoo, peppers and tomatoes (a bowl of homegrown love from my mom )

dinner: out (to a restaurant I heard has goat feet on the buffet!)


I *love* to hear what everyone is eating...I need some ideas!

Lunch today is grilled pastrami reuben on black bread. Dinner will be pork roast and probably a salad.

cottage pie topped w/ potatoes for lunch

supper is chicken and wild rice for the family w/ cauliflower w/ me and a nice HUGE salad for an appetizer!

Breakfast for me is overnight steel cut oatmeal with a ton of butter and some honey. I'm not sure what I'll do for lunch. I have some pork roast leftover, maybe I'll have tacos with that? Dinner we're having grassfed hamburgers on the grill so we don't have to heat up the house and raw milk milkshakes in honor of the So You Think You Can Dance finale (my sister comes over to watch it with me). I want to attempt french fries in our new fryer, but I have to wait until I can pick up some tallow from the farmer's market tomorrow, so we'll probably have watermelon with it, instead.

For breakfast the girls had a piece of Ezekial Cinnamon toast with canteloup. Hubby and I made breakfast sandwiches. The english muffins were so NOT TF but it's all I was craving.

Lunch we had a big bowl of fruit at the park.

Snack I made a kefir smoothie (although that didn't quite fill me up)

For dinner I signed up with the Menu Mailer through www.cookingtf.com and tonight was artichoke and broccoli pasta. I did not have high expectations for this meal. It didn't look appetizing looking at the ingredients (or lack of) but after it was together I couldn't get enough of it!!! I pan fried some shrimp in the butter and that was a great addition.

Zucchini Noodle Lasagna
(make (1) 9x13" pan)

1.5 # ground meat
1 clove garlic
parsley, thyme, oregano, basil, marjoram (ie Italian herbs to taste)
sea salt
1# can whole tomatoes
12 oz tomato paste
small can tomato sauce

24 oz cottage cheese
2 beaten eggs
2 tsp sea salt

2-3 zucchini (or other similar squash)

Brown the meat, add ingredients garlic through tomato sauce to meat. Simmer uncovered until thick (about 45 min - 1hour) stirring occasionally.

Slice the squash lengthwise to about 1/4" thickness (you want them to keep their shape when cooked and have a bit of a bite once they cook down). Lay it in a colander in layers with sea salt to draw out some liquid.

Combine cottage cheese with eggs through Parmesan.

Place the squash "noodles" between towels and press down a little to pull out any excess water and remove any obvious salt. Lay down a layer of noodles in the pan (no need to grease...they'll release water). Layer with half of the cheese mix, then half the mozzarella, then half the meat, then repeat. Bake at 350-375 at least 30 minutes (more if it seems too wet). Let stand 10-15 min before cutting.

Notes:
This was the first time I'd done it and it was a little too saucy (but still delicious) after the squash released more liquid so you might want to make the meat and/or cheese mixture a little drier to compensate (or lightly roast the squash first). Honestly, I prefer some ricotta in my lasagna, but DH grew up with the cottage cheese. You can use dried or fresh herbs to taste.

Zucchini Noodle Saute

This was not a recipe, but I can explain

I took the extra sliced and salted squash from the lasagna and sliced it into long spaghetti-like ribbons. I had about 2-2.5 cups. I put a few Tbs of olive oil, a large clove of garlic (minced), and a minced spicy pepper in a saute pan and turned it on the lowest heat. As soon as little bubbles appeared around the garlic and peppers, I turned off the oil. While I was waiting for the oil to slowly heat, I sliced up some non-spicy peppers (like bell peppers) and some tomatoes (chunky). After turning off the heat, I added the veggies and tossed it in the warm dressing. YUM

yesterday:
breakfast-
me: water with cayenne and lemon (upon waking), hard boiled egg (before workout), whey with lemon juice (after workout)
boys: ww soaked biscuits* with Kerrygold, scrambled eggs, raw milk
snack- homemade watermelon popsicles
snack- fresh cherries and soft dates
lunch- picadillo** over rice with cantaloupe
snack- homemade frozen yogurt (based on 101 cookbook's recipe)
dinner- leftover lasagna, biscuits with butter, raw milk

* these were great! I soaked with whey and raw milk and used butter for the fat (refrigerating a little before mixing things in the next day so the butter would solidify again and be chunky in the biscuits)

**my Traditional/GF/DF friend made this and it was AMAZING! from what I can remember is was ground beef, zucchini, tomatoes, green olives, and raisins with some seasonings and maybe a splash of balsamic and sherry (they were on the counter by the pot)...I think it would be great over salad greens instead of rice. my 6 yo DS said, "I don't usually like zucchini, but in this I *love* it!"

Today, we're having

Breakfast: soaked oats with raw honey, raisins and CO, milk
Snack: peaches
Lunch: leftover pulled venison (BBQ style w/homemade NT ketchup, raw honey, garlic, onion, mustard powder and chili pepper), red cabbage slaw, kombucha
Snack: hard boiled eggs, buttered sourdough toast
Dinner: Grilled burgers (grass fed), sprouted buns, grilled zucchini, huge salad with ACV dressing, iced hibiscus tea
