I love reading what others are eating, so I'll go ahead and post mine for all of you 
yesterday
breakfast - 2 hard boiled eggs (can you tell that mornings have been busy lately?? boiled eggs are boring, but fast and make me feel great)
lunch - (at IKEA) salmon on romaine (I just rolled it up
) + a few of the boys' extra Swedish meatballs (without sauce...these aren't nice meat, I guess, but the ingredient list is short and real); the boys had meatballs and organic apple sauce
snack - boys had 1/2 banana and a graham cracker each (visiting non-TF house)
dinner - bbq pork* with spicy lf pickles** and raw white onion slices + a few small bites of dark chocolate
late night snack - chunk of gouda (after my soccer game)
today
breakfast - 1/2 peach with cream, hard boiled egg and spicy garden pepper; boys had peaches and cream + homemade watermelon popsicles
lunch - me and dh: repeat bbq pork plate from yesterday; boys had open-face pb and local honey sandwich on cinnamon-raisin Ezekiel
* the bbq pork was so easy and so yummy! (my crockpot has an issue, so I used my large Le Creuset) I put boneless (since that's what they had) pork shoulder pieces in my pot, covered more than 1/2 way with chicken stock, covered it and let it cook in the oven at 200 degrees all night and all day...turning once or twice. I took it out of the broth, used two forks to shred it, added a natural bbq sauce (I was out of homemade), and baked uncovered at 350 degrees for 20 minutes to let the sauce absorb and crust up a few top bits...mmmmm! (of course, I strained and will re-use the broth!
)
** I made spicy lacto-fermented serrano/cauliflower/carrot/onion/garlic mix and used the extra brine to ferment some cucumbers.
