need WW zucchini bread recipe w/maple syrup

Does anyone have a good recipe for whole wheat flour zucchini bread with maple syrup as the sweetener? I made one last week but it was way too moist.

I am pretty sure there is one in Cathe Olson's "Simply Natural Baby Foods" book. I know she gets on here occasionally, maybe she will post it.


Here's one I found online but haven't tried:

3 Eggs
1/2 cup melted butter
1/2 cup raw coconut oil, melted
1 1/4 cup real maple syrup
Zest and Juice of 1 Lemon
3 cups well packed Shredded Zucchini
2 1/2 cups Whole Wheat Flour
1/2 tsp Salt
1 tsp Cinnamon
1 tsp Baking Soda
1/2 tsp Baking Powder

Preheat oven to 325.

In a large bowl, beat eggs, butter, oil, lemon zest, lemon juice, and syrup together. In a separate bowl, whisk the flour, salt, cinnamon, baking soda, and baking powder. Stir the dry ingredients into the wet and fold in the zucchini.

Pour batter into two greased 9 inch loaf pans. Bake 50 minutes or a tester comes out clean. Enjoy!

Haven't tried them yet, but I found this thread (which include's Cathe's recipe) & this site , which includes Sue Gregg's recipe.

This one is pretty simple and super tasty!

1 1/2 c. grated zucchini (just grated: don't try to get the water out of it)
1/2 c. oil or melted butter (or 1/2 c. applesauce + 1 T oil)
1/2 c. maple syrup, molasses, honey, or brown sugar
2 eggs, beaten (or 2 T flax meal + 6 T water, heated)
1 t. vanilla
1 1/2 c. whole wheat flour
1/2 t. baking soda
1/2 t. baking powder
1/2 t. salt
1 1/2 t. cinnamon
1/4 t. nutmeg
1/2 c. chopped nuts

Beat together oil and syrup. Add eggs, vanilla, and zucchini; mix well. Sift dry ingredients and add to wet. Fold in nuts. Baking in a gresed 9x5 pan at 350 for 45 - 60 minutes until test done. Cool in pan 10 minutes. Invert onto wire rack and cool completely. Freezes well.
