Ok, I'm in a major dinner time rut... Just been trying to think of what to make for dinner (meal plan, ya know) and find myself thinking of the same danged things over and over again. So, I'm going to share a recipe and hope that you all will do the same. Maybe all those in a rut can help each other climb out.
We don't have any restrictions besides peanuts. We eat meat, but the family is (usually) open to a vegetarian option now and again. My youngest DSD seems to be on strike eating anything except junk food, so maybe something junk-food like (but healthy) would be nice. Biggest restriction is that both DH and I WOH FT, so something without buckets of prep-time is delightful.
My fallback recipe:
Mujadarra
1c lentils
1c rice
4c water
2 medium diced onions
1 onion sliced into rings
Olive Oil
1.Start the water boiling, when boiling, add lentils. Turn down to a simmer and let this go for 20 mins.
2. Start sauteeing diced onions (we garlic add garlic and/mushrooms) in olive oil.
3. At the end of the lentil 20 minutes, dump sauteed onions and rice into the pot with the lentils, turn up to boil, then bring down to a simmer for another 20 mins.
4. Meanwhile, sautee the the onion rings until they're nice and crisp.
5. Once the big pot is finished (all water is absorbed), place the onion rings atop the main dish.
Eat, enjoy! Goes well with a cucumber/tomato salad.
You can modify this to include brown rice (which I do about half the time), add about a cup more water and put the brown rice in at the beginning with the lentils.

I saute onions and peppers, add tomatoes, whatever veggies I have in the house (zuchinni, squash, eggplant, carrots, chard, really lots of stuff works), then add beans. About 2 cups. Again, any type works, but I usually do pinto or kidney. Simmer that for a while. Season with cumin, coriander, garlic, salt, pepper, and a little chili powder. You want the chili taste, but not like a pot of red chili, you know? Keep it at a pretty high simmer, so that the bottom of the cornbread cooks.
