Recipe for Birthday cake: free of sugar,dairy,wheat,egg

My babies 1st birthday is coming up and I'm trying to decide on a cake recipe. can't seem to find one that fits the mold. Anyone have any ideas?

•1-1/2 cups Spelt Flour
•1/4 tsp. Guar Gum
•3 Tbsp. Cocoa
•1 tsp. Baking Soda
•1 tsp. Baking Powder
•1/2 tsp. Salt
•1 cup Pure Maple Syrup
•1 Tbsp. White Vinegar
•1 tsp. Vanilla
•5 Tbsp. Oil

1.Preheat oven to 350°F. and prepare (grease) an 8-inch-square cake pan.
2.Sift all dry ingredients (spelt flour, guar gum, cocoa, baking soda and baking powder) into a large mixing bowl. Note: Ensure that guar gum is well distributed as it could turn into "clumpy gum" when mixed with liquid.
3.Mix maple syrup, vinegar, vanilla and oil together in a small bowl.
4.Combine dry and wet ingredients and mix quickly and well.
5.Pour batter into greased cake pan.
6.Bake for 25 minutes or until done.
7.Cool cake on a rack.

My friend makes this cake for all of the bdays in her life. It's yummy.

She ices it with this:

Creamy Tofu Frosting Recipe

•1 cup (1/2 pound) firm tofu
•2 tbsp oil
•2 tbsp lemon juice
•3 to 4 tbsp maple syrup
•1/2 tsp vanilla

Place all the ingredients in a blender or food processor and puree until very smooth.

:

If you don't like soy:

Coconut Cream Frosting
1 cup coconut milk
1 cup maple syrup
pinch of salt
5 teaspoons arrowroot powder
1 tablespoon water
1ÂĽ cup coconut oil

1.In a medium saucepan, heat coconut milk, agave and salt, simmer for 10 minutes
2.In a small bowl, combine arrowroot and water to form a smooth paste
3.Pour arrowroot mixture into saucepan
4.Mix contents of saucepan with a hand blender and bring to a boil, briefly
5.Remove pot from heat and very gradually blend in coconut oil
6.Place pot in freezer for 20-30 30-40 minutes, until frosting solidifies and turns white
7.Remove from freezer and blend again, until fluffy
8.Spread over cake or cupcakes

I use this one when cooking for my vegan friends! Super yummy!

just a word- spelt is a species of wheat. a cake w/ spelt flour is not wheat free. You can always check the allergy forum recipe thread tons over ther.

I'm so sorry. My friend makes this cake all the time for her wheat sensitive lo.

I didn't mean that contrary- lots of people do use it- but it is not something I would do w/ a documented sensitivity- I think it is playing w/ fire- but hey that is my opinion. As I said though it is a species of wheat and goods made w/ spelt cannot be labeled as wheat free.

Thank you! I looked up spelt and realized that too. I'm gonna keep the recipe and try it another time. It does look yummy!

ding ding ding. I think this is the winner. I'm getting drained trying to figure this out. I feel alot of pressure to do a cake, but my gut says no. He's getting fruit or veggies, family, fun and presents! thanks.

Plus if you want messy face "cake" pics, make the whipped coconut "icing" and let him dip fruit in it!

here is a grain free carrot cake recipe that is pretty good

Gluten Free Carrot Cake
3 cups blanched almond flour
2 teaspoons celtic sea salt
1 teaspoon baking soda
1 tablespoon cinnamon
1 teaspoon nutmeg
5 eggs
½ cup agave nectar
ÂĽ cup grapeseed oil
3 cups carrots, grated
1 cup raisins
1 cup walnuts

In a large bowl, combine almond flour, salt, baking soda, cinnamon and nutmeg
In a separate bowl, mix together eggs, agave and oil
Stir carrots, raisins and walnuts into wet ingredients
Stir wet ingredients into dry
Place batter into 2 well greased, round 9 Inch cake pans
Bake at 325° for 35 minutes
Cool to room temperature and spread with coconut cream frosting
Serve


We served this with Strawberry puree instead of frosting. It was really good. To make almond flour just put the almonds in the food processor and grind until flour like making sure that you don't make almond butter

THank you for the posting this! I'm printing it and keeping it! I think I'll have to hold off for this bdy though bc baby hasn't had nuts or eggs yet. I'll probably wait quite awhile b4 introducing them. I love the idea of making my own almond flour...I'm really excited about all of this. I don't think I'll use reg. flour ever again! Seriously, I love it. Do I just whip the coconut oil to make it smooth or do u add anything to it? He has had coconut oil so that should be fun!

The in-laws will have a fit and add it to the list of my being wierd, but that's ok. Baby is gonna love this!:
