What's for breakfast?

We are all trying to eat healthy for our babies... I thought it would be neat to start a thread where we can share some of our favorite breakfast ideas!

This morning I made waffles:

Green Waffles

1 cup oats
1/2 cup Garbanzo Flour
1 cup water
1 egg
1 Tablespoon olive oil
2 teaspoons agave nectar
1 tsp hazelnut extract
1/4 teaspoon sea salt
1/2 teaspoon baking powder
1 Tbs. Vitamin and Minerals Protein powder

Preheat waffle iron.
Place oatmeal in blender. Grind into coarse flour.
Add all remaining ingredients. Blend. Let sit a few minutes. Blend again for 2 seconds. Pour into hot, well-oiled waffle iron. Bake 5 to 8 minutes.
Made 4 very tasty waffles

I had 2 and DS had 2, DH was not brave enough to try it because it was green...

Mmm those waffles sound great. make a huge batch, and then freeze whatever you do not eat right away. They heat back up quickly in the toaster. We do this with waffles and it makes for a healthy, easy breakfast on those rough mornings.

This morning we have granola and yogurt, since that is all my kids will reliably eat this week, and i was not in the mood to fight about it.

funny! we had waffles this morning too! peanut butter with whole wheat flour and a few chocolate chips (to make them for exciting for sir, plus, dude, peanut butter and chocolate? yes please!). and then i froze the rest and will be seeing if the little guy will want some for the next week or so.

usually i have homemade granola and oatmeal milk, though. and sometimes some fresh fruit on top.

we'll see though, if morning sickness is really kicking in, it could all go right out the window any day now for the next few months *sigh*

For me it's 2 scrambled eggs, a piece of wheat or oatmeal toast, and chocolate milk. But I'm not sure how much of that I actually get to eat -- DD usually pops up and starts begging some off me. She probably eats about half the eggs and toast. Plus her breakfast. And a 10am snack. How is she only 24 pounds?!

I usually have an egg sandwich with cheese on homemade buttermilk bread. I make a PB smoothie (natural PB, milk and bananna and ice) to go along with it. I love breakfast, it's my favorite meal.

What a great idea! I'm always looking for good, healthy eating tips.

Today I had a Breakfast Smoothie:
- Blueberries
- Almond milk
- Fine porridge oats

For the past 6 years I have had the same breakfast almost every morning. Two whole wheat waffles with peanut butter on them.

This morning they didn't sound good to me. Pregnancy symptom?

Now I want eggs. That takes more effort, damn it.

Mmmm, I haven't had breakfast yet... thanks for the inspiration! I think we'll have eggs and whole wheat toast. Maybe with cheese. :

I am totally hooked on breakfast scramble. I've been making it every morning I eat breakfast. If I don't have time to make it, I can't stomach breakfast.

It must be this: 1 pkg bacon, 6 eggs, 1 tomato & 1/2 ounce raw cheddar

I tried making this in a one serving quantity and it's just not the same. Also, the tomato and bacon must be very finely diced and the tomato must be squeezed of all juices. Also beware, the addition of basil from the garden sounds tempting but it makes the batch inedible by cranky pregnant mamas who just want their plain breakfast scramble. Don't ask

Banana and cottage cheese

Toast and boiled egg

Oatmeal.

However, similar to last pregnancy, the texture of oatmeal seems to be throwing me off.

Since I found out I was pregnant, I've been eating toast or whole wheat english muffins with eggs. I've been mixing the eggs with cheese and ham. However, this morning, it was all just unappealing to me. I feel like I need to be eating a lot of protein, but I only want to eat bread, fruit, or cereal for any meal. I'm worried I'm going to gain a bunch of unnecessary weight from eating carbs. The mornings have been terrible for feeling nauseous. It's hard to get moving in the mornings. Any suggestions?

YES! You can make some delicious low-carb pancakes!

2 eggs
6 Tbsp flax meal
1/2 tsp salt
1/2 tsp baking powder
(optional sweetener; I use Splenda & 1 tsp cinnamon!)

Heat up a skillet, beat the ingredients together, when the griddle is smoking hot pour by the heaping spoonful into the skillet, spreading it into a pancake sized circle if neccessary.

They will look somewhat cooked around the edges & slightly bubble on the top when they're ready to flip!

I was BIG into eggs/ham/bacon/cheese for weeks, but now I'm cooking pancakes! Once I get fixated I pretty much eat one thing ALL the time.

Anyway! Hope you enjoy them! These are defintiely more similar to a dense bread-like whole grain pancake than a fluffy buttermilk confection, but still tasty with lots of protein & fiber!

I am finding it hard to find stuff to eat because all I crave is tomatoey stuff - like pasta! lol - I don't want to eat it all day long though! hehe....
For breakfast I am having a bowl if plain yoghurt with fresh fruit (a berry of some kind) and a hard boiled egg.

sonjuana, my sister had a really hard time finding good breakfast food after she got "sick" of eggs too. she was really relying on them for her protein!

i've been using hemp seeds for protein a lot. a couple of tablespoons in a yogurt smoothie really pumps up the protein...... mmmmm..... i'm going to have a peach, hemp seed, yogurt smoothie - RIGHT NOW - it's 5:45 am, but i've been up since 4:30

oh, and greek yogurt has much higher protein, cause it's more concentrated (drained) and you can get the 0 fat if you think you're getting enough from other sources.

I'm trying to eat eggs as long as I can stomach them. I get like a dozen a day from my backyard chickens, so we must keep eating eggs around here at all costs.

I've found if you scramble eggs with a lot of milk--fresh, cream on top milk--then whisk until they froth a little, then fry in a pan with butter or coconut oil, then they are light and fluffy and DELICIOUS. It's like eating dessert for breakfast! I sometimes cut up cherry tomatoes from the garden and throw them on top for some extra veggies in my diet. I seem to have a hard time eating enough fruits and vegetables when pregnant in the first trimester.

Last night I went to bed feeling right on the verge of puking. I finally fell asleep...and I vividly dreamed that I was eating thick delicious pancakes dipped in a bowl of warm maple syrup. I dreamed it over and over in different scenarios all night long! What in the world?

Smoothies with DHA/Omega-3 oils, scrambled eggs, and this (taken from Bastyr's site):

4 cups rolled grains (Begin by using the following proportions, adjust as necessary: 2 cups rolled oats (flakes); use 4 cups if other grains are unavailable. 2 cups other rolled grains; i.e. rye, barley, and/or rolled rice flakes.)
2 cups oat bran
1/2 cup fresh/dried fruit/seeds
Raisins, dates, blueberries, etc. (unsulphured only)
1 cup sunflower seeds and/or pumpkin seeds (can be ground)
1 cup nuts (begin with walnuts and almonds)
1 cup lecithin granules
1 cup ground flax seed
1 cup milk thistle (silybum marianum seeds)
1/2 cup chia seeds (optional)
Spices: Try coriander, fennel and/or turmeric.
Begin with 1 teaspoon of each. Experiment with ginger, cinnamon and other herbs/spices.)
Grind flax seeds and milk thistle seeds (available at health food stores) in a coffee grinder, blender or meat grinder. Next, combine all ingredients and keep in refrigerator. Soak for 30 minutes or longer before eating (i.e. overnight). Use water, nut milk, rice milk, apple juice, etc. To make almond milk, blend 1/2 cup almonds with 2 cups water in a blender.

uh, i thought you meant smoothies WITH scrambled eggs :Puke

so, funkymum, what's the texture of that thing you have in your post? is it like an uncooked wet cereal? is it soft, or really chewy and crunchy with the nuts?

at the end, it says, "use water, nut milk......" for what?

please excuse my ignorance, i clearly don't have experience with this type of thing.

Yeah, scrambled eggs in a smoothie is definitely OUT! As for the oatmeal, I have to admit that I wrote the recipe o the post to get myself to try it again. I know it's good for me, and seem to remember that it was soft (leaving it overnight "cooks" it) and tasty. I think the different liquids are for variations of taste and consistency. I always liked my oatmeal a little runnier with a little milk. Let's try it out and see how it works out!
