What's for dinner?

We are all trying to eat healthy for our babies... I thought it would be neat to start a thread where we can share some of our favorite dinner ideas!

okay it's official, i'm moving to your house ivymae!

we're having a homemade seitan, broccoli, kale, and carrot stir fry, with a homemade peanut sauce over brown jasmine rice.

Tonight was chicken paprika with egg noodles and broccoli. It's funny... that was a staple for me in early pregnancy with DD because it was one of the few things that sounded good. But then it got associated with the nausea in my brain and I haven't really made it since then. It just popped into my head early this week. Weird association to have.

We had horseradish baked mac and cheese (with rice pasta), salad and fresh corn on the cob.

tonight I am going to slice up some leftover flank steak, cut up an avocado, add sour cream, chopped cherry tomatoes, some shredded sharp cheddar, and wrap it all up in a warm tortilla. I will have some beet salad with it... the beet salad has pickled beets, red onions, garlic, lemon juice, and chives in it....

Big A** Salad. We have it at least once a week, and depending on what is in season/in the fridge and needs to be eaten, it never looks the same twice. Tonight it was butterhead lettuce, fresh cherry tomatoes, black beans, broccoli sprouts, local mushrooms and crispy chow mein noodles, with a honey/mustard/vinegar/mayo/sesame oil dressing. When i write it out it doesn't sound great, but I ate it in about 7 minutes flat.

I have a hard time with dinners. I work 3 nights a week and I usually just have a Lean Pocket, frozen meal, or order greasy pizza from downstairs.

tonight I had some spinach with cherry tomatoes and the tiniest splish of ranch dressing, topped with grilled chicken. And some beet salad

I grilled eggplant and portobella on the George Foreman. Then I fried up some green olives, pearl onions, zucchini, and bell pepper in some seasoned olive oil. When that was done I added it to the grilled veggies, fresh mozzarella, roma tomatoes, and garlic and tossed in a splash of balsamic vinegar. MMMMMMMMM!

Well I don't want to say now

I went out to dinner at a local Irish pub with my mom and I had fish and chips. And 2 potato skins...

Okay, but I had a healthy lunch! (big veggie filled salad and a tuna sald sandwhich on whole grain bread with big thick slices of fresh tomatoes from my garden and homemade relish with cucumbers from my garden).

You ladies have too much energy for me. I went to Noodles and got Bancock curry with shrimp and potstickers. Too tired to cook. . . . . . . . .
