Recipes With Anaheim Peppers & Potatoes?

Hi,
I've got lots of these in my garden right now and I've never really cooked with Anaheim peppers much - anyone got any recipes for potatoes and Anaheims?

Potatoes O'Brien / Hash is a great use for potatoes and onions. And it freezes pretty well.

Of course gratins or something like a shepherds pie with lots of peppers would also be great.

I bet a gratin would be yummy with chiles! Think I'll try that.
I've got a whole cooked chicken I need to use - maybe a gratin - type casserole...
