Quinoa recipies

Anyone have a killer quinoa recipie? I just tried it yesterday and really liked it and would like to use it more (much to my children's dispair).

We make this quinoa salad every week in the summer! It's from the superb book Feeding the Whole Family by Cynthia Lair.
Wash, rinse, drain 1C quinoa. Cook with 1 3/4C water with a little salt for about 15 minutes till water is gone. Toast 1/4C pine nuts in skillet. Combine 1/4c olive oil, 1/4c lemon juice, big handful of chopped parsley, small handful of chopped mint, a couple chopped scallions or a little red onion, 1/4c currants, 1/2c crumbled feta. Toss it all together and serve warm, room temp, or cold. My toddler loves this!! :

Quinoa, cooked and cooled
Toasted pine nuts
Peas, cooked and cooled (or thawed!)
Chopped sun dried tomatoes

Toss with a balsamic vinaigrette

Everyone I serve this to goes nuts over it!

This is not a recipe per se, but I love quinoa in lieu of grits for a breakfast "grit bowl". Cook quinoa per directions, poach or fry an egg and nestle into quinoa. If desired, add cheese or sausage. Yum!

I made quinoa tabouli a couple weeks ago and it was really good. I used sliced red and orange cherry tomatoes in place of the romas. YUM! Oh and I left out the currants because I didn't have any.

I used this recipe, but I'm sure you could base it off any tabouli recipe you like.

I add chopped cumcumbers, cilantro, chopped tomatos, garlic, lemon juice & a pinch of salt & pepper...yummy. If I don't have anything on hand I grab the fresh salsa from trader joes & that does a nice job as well.

The ways we eat it:

Just boiled with butter and salt mmm
Tabboulleh made with it instead of bulghur wheat
Quinoa flakes hot cereal with butter, hemp seeds, cinnamon, salt and honey

And I just made pancakes with quinoa flakes yesterday and they turned out good!
For 2 servings:
1/2 cup quinoa flakes
1/2 cup water
1 egg
1/2 tsp baking powder
1/4 tsp baking sodea
1/4 tsp salt
a bit of sugar, honey or stevia
Blend for a few minutes in a food processor

I've made this several times, and am addicted! (I make it w/o the nuts, though...)
