leftover cooked oatmeal recipes?

i made a huge pot of oatmeal for a breakfast buffet and i have about 10 cups of mushy cooked oatmeal leftover.

i need some recipe ideas since we aren't going to eat it for breakfast (i like my oatmeal chewy!).

You can incorporate it into bread dough--I don't have the recipe handy, but there's good suggestions for making bread out of leftover cooked grains in Feeding the Whole Family.

You could make it into pancakes. Not exactly sure how but if I were to play around with it I would add baking powder and eggs and then add milk or butter milk to get it to the right consistency.

I agree with both those suggestions. The recipe from Feeding the Whole Family is the one I use to make bread at least once a week. It uses 2 cups of cooked grains in the starter. Blend with 2 cups water, tablespoon yeast, tablespoon salt, 1/4 cup oil, 1 cup ww flour and let sit 12 to 24 hours. Then add 2 cups ww flour, 4 cups white flour and 1/4 cup sweetener, knead, rise again and then rise in 2 loaf pans. It's delicious.

I also think that you could add a cup of cooked oatmeal to pancake or waffle batter. Maybe puree it with the liquid so it incorporates easily.

You could freeze it in one cup portions and then use it as needed. I always scrape leftover oatmeal from the pan to save for the bread recipe listed above.

Or you could feed it to the dog in small amounts. : )

I like my oatmeal kinda chewy too, but can't perfect the way of cooking it like that. Can you tell me how? Thanks!

i use 1/2 cup thick cut rolled oats from the coop (in the bulk bin) and cook it for 7 minutes in the micro (or stove) with a scant cup of cold water.

i am thinking of making an apple oatmeal yeast bread today. :

I think the trick is to use rolled oats and not quick cooking oats. I do a 1:2 ration of oatmeal to water just like umami_mommy. If you really want oatmeal with some bite to it, try steel cut oats. Yum.

Thanks I made me a huge bowl (one cup oats and 1 3/4 cups water) and cooked it for 5 minutes then let it cool off. Added some milk and cinnamon and sugar and 'nummed up' the whole bowl : and it was so yummy. I'm going to start eating that for breakfast. I'm starting to pump a little now that my dd will drink from a sippy cup now but I'm not able to get much. Hopefully this will help!
