Fried Green Tomatoes are delicious! I usually make garlic/mayo to go with them.

We love fried green tomatoes here, too! In fact, it is one of only 3 ways my kids will eat tomatoes (salsa and pasta sauce being the other two . I've also made green tomato relish, but you'd need more than two for that.

If you'd really prefer red tomatoes, if they are at least tinged with color, there is a good chance you can get them to ripen. Try putting them in a paper bag with a ripe banana to speed up the process.

My DH has a recipe for green tomato pack. He loves it. I can dig out his recipe if you are interested. It reminds me almost of a pickle but with green tomatoes.

Fried, pickled or relish. They may eventually turn red, but they'll taste like grocery store tomatoes. You'd be better off using them in a green recipe.

I got a green one in my CSA box this week, we had fried green tomatoes with dinner last night. I'm not crazy about pickled - they're a love em or hate em type of thing IME. But I love green tomato relish. But that's something you do at the end of the season when you're stripping the bushes before the first frost and you have a whole lot of green ones.

You can chop them into rice or soup or something. It gives a nice tart flavor to vegetable dishes. A couple of years ago we had a really early frost that caught a bunch of my plants unawares. I had a big box of green ones I turned into green tomato chutney and canned.

Last year I made a bunch of green tomato hotdog relish out of all the green tomatoes I had at the end of the year. It turned out pretty good, though we've given most of it away (we're not big relish eaters...).

Anything unripe is gonna be way better cooked. Try using them as a salsa verde over enchiladas (puree with some of a pepper (pablano maybe?) and pour over rolled, filled corn tortillas before baking). Normally you do it with tomatillos.

If the tomatoes were fully grown and just hadn't turned red yet when they fell off, you can leave them on your kitchen counter and they'll turn.

If they were immature, they'll stay green, that's all there is to it.

I do green tomato relish. Not until September when the rest of the relish ingredients are available though. Haven't done fried green tomatoes - up in my area, rocky mountain oysters are more popular that fried green tomatoes.
