No bake cookie recipes

We are going on vacation next week and will be in the car for a long time. I want to bring a long an assortment of snacks for the kids. In particular I am looking for a no bake cookie recipe, or similar snack. Can someone please help with recipe ideas? TIA!:

Hi columbusmomma!

This is a recipe for chocolate no-bakes that I used to make all the time a few years ago. I got it off this board. I wish I could remember the poster's name.

6 tablespoons whole milk
1/3 cup sugar
1 Tbsp cocoa powder
3 tsps vanilla
2/3 cup unsweetened peanut butter
3 tsps ground flax seed (or lots more!)
2 cups oatmeal

Heat the milk in a saucepan. Add the rest of the ingredients, then spoon out to cool.

This recipe can be fiddled with and always turns out.

These are good!

Healthy Peanut Butter Balls.

3/4 cup quick-cooking oatmeal or rolled oat
3/4 cup oat bran
1 1/2 cups whole wheat flour
1 cup ground flax seeds
1 cup honey
1 1/2 cups dry milk
1 1/2 cups peanut butter
Directions
-In a large bowl, mix together all ingredients. You may have to mix by hand. I've found it helps to mix with your hands much like kneading dough. It's a little dry, so you may have to add a tiny bit of milk or oil to keep it together.

-Roll into 1-inch balls and store in airtight container in the fridge. You may roll them in wheat germ or powdered sugar if you like.

1 cup dates
1 cup walnuts
2 T peanut butter
2 T carob powder
1 tsp vanilla

Pour boiling water over dates and allow to soften for 10 minutes. Take out pits from dates. Add them and rest of ingredients to a food processor and process until smooth. Roll into balls and refigerate until ready to eat.
