What's for snack?

I wanted to add this to Riverbeauty's other what's for __ meal threads because this is where I have some issues.

I made a bunch of muffins before I went on vacation and have been eating those. But I need some healthy snack ideas, as well as some semi-healthy ones that will satisfy my chocolate tooth (not just a sweet tooth- it's very specific).

Maybe homemade granola bars?

I think I'm supposed to stay away from aspartame, right? I am not as crunchy as some here, and it and splenda used to be in a lot of stuff I ate/drank, though I had been trying to cut it out. Of course, I bought a whole big huge container of Light n Fit yogurt the day before I got my BFP.

So what do you eat for a snack?

This isn't snack related, but since you asked about chocolate...

I'm careful with carbs for medical reasons, but I adore chocolate - I like mine super dark, so the chocolate I "make" is totally biased in that direction.

I buy unsweetened "Bakers" chocolate. I have a pretty dumbed down sweet tooth for obvious reasons, so I enjoy it plain, however I also make chocolate bars, ganache, fondue, ice cream - whatever - by chopping it finely & melting it with xylitol/splenda/stevia/your preference here.

Clearly for hard chocolate you don't add any liquid - I nuke it about 30 seconds & it's usually melted. Then I spread it out on wax paper, press flat & freeze. From there you can either eat it (yum) or break it into "chips" for use in cookies, trail mix etc. You can also pour the melted chocolate over nuts/coconut/"trail mix" concoction for a chocolate covered extraveganza.

Ganache/fondue is made with the addition of cream and/or butter.

I also mask my chocolate under the guise of a snack by making a chocolate "muffin." Sometimes it's even chocolate coconut. Crazy, I know.

1 egg, beaten
2 Tbsp flax meal

Beat well. Add cocoa powder & sweetener and/or homemade chocolate "chips", coconut, nuts, cream cheese, etc & microwave 1 minute.

Presto! Protein, fiber, omegas & magnesium all in one delicious low carb sugar free concoction.


Also delicious is a chocolate "macarroon," which is essentially the same idea, only almond flour/ground almonds in replacement for the flax meal. Various extracts and flavorings enhance the "Snack" in obvious ways.

Oh yum. I love chocolate concoctions.

I also love really really dark chocolate. Though anything above about 85% is getting too dark for me.
