cookie/baking sheet recommendation needed!

The non-stick metal ones lose their non-stickiness or start flaking their non-stick coating into our food after a few years, and the silicone one is a) floppy so can't go in the dishwasher and b) pitted (a key feature of its non-stick-ness, I think), so despite cleaning by hand usually has a greasy film on it.

Ideas? I don't mind needing to grease or oil my cookie sheets, but I want something that doesn't try to keep my food for itself and isn't too hard to clean.

I have two baking stones I use for cookies, bread, scones, basically anything I can bake on it. Mine are well used, so the food comes off easily with a spatula, and then I just scrape the rest off with a scraper and water. I find them super easy to use.

What kind of silicone do you have? I have a few of the cheaper kind and find the same thing withthe greasy film (gross)

I got a real silpat mat last Christmas and love it. I use it on top of any of my cookie sheets, even the old gunked up ones because the cookies only touch the silicone.

Since I only have one silpat I use parchment paper on the other pans. The parchment paper can be used many times before it's too gross to use anymore. I use one piece for 2 or 3 batches of cookies.

I second the parchment paper recommendation.

If you have a restaurant supply store in your area, buy some half-sheet pans. They're great quality, will last forever and they're cheap at around $6US.

I have ones from Doughmakes which are very nice, but are aluminum. I'd try to find a nice set of stainless steel if I was doing it again, then you'd just have to grease them lightly. Good luck!!

Go to your local restaurant supply shop and get their simple baking sheets. They far surpass all of the fancy, expensive baking sheets I've gone through (and gotten rid of) in the past 15 yrs...

I got mine at Sam's Club, a 2pk for about $11, LOVE them, they are the best baking sheets I have ever had and also the cheapest!

Pampered chef stones, all the way! Very easy to clean, durable, and I swear things just taste better cooked on the stone! For cookies, it gives them that perfect slightly-crispier-on-the-outside texture. I love mine and use it daily!

I agree.

Just get the kind from the professional cake section at wal-mart. (Jelly roll pans) or like section at any craft store. (Dont go to the cooking isles.)

Make sure its silver color, aluminum and not that dark colored crap. The heavier the better. That makes for burnt everything and is a PITA.
