Almond paste from almond milk?

I make almond milk weekly and I'm always left with a ton of almond paste that I'd rather not throw away. I know there are probably a million cookie recipes I could use it in, but is there anything else? Suggestions?

I posted a thread in the vegetarian section re almond milk and was hoping to find someone who makes almond milk regularly. I started last week. Maybe you can answer some questions for me. I'm making it every 2 days now. How often and how much do you make at a time? How long does it last? Today I tried making it with dates and it was much better than using honey. What is your recipe? I'm too trying to find out what to do w the almond meal. I know I have a book that has some sort of recipe for this. I'll see if I can find it. Do you use a vitamix or regular blender?

I make it once a week. I use:

2 cups almonds
6 cups water
1-2 TB of vanilla (the kind without alcohol) or vanilla powder
2 TB agave nectar

Blend and strain.

I tried making it with a 1 cup almond to 2 cup water ratio, didn't like it as much, so now I use a 3 cup ratio. I have used dates but they seem to get lost in there, maybe need some more? I use a regular blender, but considering the vitamix if we can afford it.

I hope you find some recipes, 'cause I got tons of paste, might go and make cookies right now!

There is a thread in the Vegetarian forum and here is the link someone posted (recipe)-not sure if you saw it. I blended the nuts w the water first,pinch of salt and then strained-then add the Dates, vanilla and blend again. Most of the dates liquefy but some don't. It really made the milk thicker and tastes better to me. My blender broke so now I need to order another chopping blade. Would love the vitamix but not sure if I want to spend that much right now.

So you find the milk will stay good for a week? I read somewhere that the person said after a day it tasted weird. I know I've gone 3 days and it was just fine. Can't see why it would go bad.

That link is one of the recipes I looked up when I started making almond milk.

My almond milk does stay good for a week (I do keep it in the fridge 'cause I like it cold, but I have read you don't have to?). I just made a batch with 2 cups almonds, 6 cups water, strained after I blended, then added 1 TB vanilla powder, a squirt of agave nectar and 6 dates. Maybe the dates I get aren't as sweet 'cause I don't really see much difference with or without, but I keep adding them for the extra calories.
