Haven't tried it with marrow - but for pate, I use a cookie scoop and scoop it onto a salad... with some sliced kumquats and a dijon vinaigrette it's fabulous.
As for the OP - I suppose it would depend in part what you mean by protein at a "reasonable level". Most of my fat comes from eggs, dairy (cream, some milk, cheese, butter, sour cream, yogurt, kefir), nuts, meat, and the occasional avocado. I do keep CO in the house, but don't really use it all that often anymore... I'm more likely to use lard or bacon grease if I need it.
