canning pumpkin anyone?

How do you can pumpkin puree? The Ball book doesn't mention it. I'd rather not freeze it due to lack of freezer space. Has anyone done this before? I have a water bath canner, but my mom has a pressure canner and is willing to take my prepared jars for a spin if need be.

Pumpkin puree isn't safe to can. You can do pumpkin in 1 inch cubes packed in water, but it has to be pressure canned in pints. I'm not sure of the processing times...

Yep, you can't safely can pureed pumpkin. The puree is too dense and it's impossible to make sure the entire thing has gotten hot enough. But you can pressure can cubed pumpkin. More info here:

If you're planning to use it for pies, I'd just as soon freeze it if you have the room.
