Need ideas for sandwiches and lunches

Its going to be a lean month where we are eating out my well stocked pantry/freezer (seriously, we only have like $20 in FS left, I don't know what the heck happened!). I have lots of chicken and eggs so chicken and egg salad sandwiches come to mind. I can't afford to be buying lunch meat (we have to get the natural uncured $$$ stuff due to allergies). I'm going to boil some more chicken to make BBQ chicken sandwiches. We do have some ham I can chop up but not sure what to do with that (bought it for ham and potato soup and omlettes). I just bought a ton of flour this month so I can bake a lot of bread and what else we need baked stuff wise. We have a lot of ground turkey too, maybe sloppy joes? We have stuff to make Pizza but my kids are not real fans of it, wonder if they would like it better if I made them like hot pockets or something.

ETA: We are gluten/dairy free

ham and bean soup (with bread or cornbread)?
bean and cheese burritos or quesadillas (homemade tortillas)?
ham and cheese quiche or frittata?

Make broth with your chicken bones so you can make chicken soup, egg drop soup...

Obviously we are OK with soup for lunch and not sure if that works in your family.

Have a garden or know someone with one? Bet they'd be willing to give away some zucchini! LOL (and maybe tomatoes, beans and herbs too) Seriously, ask. Sometimes I get a bunch of something at once and I am happy to share!

Oh and same with fruit trees! Many things are coming on now and you might be able to score a bunch of berries or plums (or whatever is ripening where you are) for snacks.

OH and I can't believe I didn't suggest this since I am eating it right now LOL

but I make chicken broth and then make homemade egg noodles with eggs and flour and cook them up with leftover chicken in the broth. I add sauteed carrots, onion and celery - and sometimes parsley - and but my mom and grandma never did.

What about 'meal in a loaf?' It's basically a pizza dough (or regular bread dough) recipe, rolled out flat after the first rising. Fill half of it with your desired fillings (cheese & broccoli, diced ham & scrambled eggs, etc, think hot pockets style). Fold the other half over the top, crimp, cut a couple slits & then bake. Really yummy. And the fillings are endless. You can even make a breakfasty type one filled with scrambled eggs, veggies & a bit of diced meat. I can't do dairy either, so I usually leave out the cheese and sub in alternative milks for milk.


You can also make pitas that you can let your children stuff themselves. Even with shredded chicken, just vary the spices/sauces and they will feel different (bbq chicken, then curry chicken, then mexican chicken, etc).

From your list, I don't know what else you have in the pantry. A good way to find recipes for what you DO have is to go on allrecipes.com or recipezaar.com select ingredients & input the ones you have on hand.

ETA: Just noticed the gluten free. Hmm, maybe instead of sandwiches, focus on normal gluten-free fair instead--corn bread, rice dishes, etc.
