Balancing t00-sweet tomatoes

I'm not sure what I was thinking when I ordered seeds, but we ended up with several plants of both a pink and a yellow tomato (bull's heart and pineapple). We're not huge fans of the flavor of these tomatoes. They taste, well, really, really sweet.

Last night, I made tomato sauce out of them, and while it was okay, it turned out crazy sweet. Like I had added sugar to them. Yikes. I'm not sure what to add to the cooked tomatoes to balance out the sweet flavor. Any ideas? I don't want these tomatoes to go to waste, and there are a number of them, so at least 3-4 more big pots of sauce to go.

To temper sweetness, I would add some vinegar, like a nice balsamic or white wine vinegar. I would also add some spiciness and make it spicy.

Also, with sweet tomatoes you could make bbq sauce. It's generally on the sweetish side.

Generous lemon. Tomato sauce around here means tomatoes, onions, garlic, basil, oregano, salt, pepper, cinnamon or garam masala, lemon ... and a little sugar. Given sweet tomatoes, I'd just omit the sugar.

The tomatoes you listed aren't really sauce tomatoes to begin with though ... I honestly also might consider throwing in some tomato paste to help make up the difference, and otherwise would consider finding a different use. (Gazpacho? Adding salt and lemon to them before adding them to salads and sandwiches? Roasted? Stuffed?)

Thanks for the ideas! I'll try the vinegar/lemon juice trick.

I know that these tomatoes aren't sauce tomatoes, but they aren't very good raw (they taste, well, sweet ).... so that leaves cooking them, you know? We do like ketchup, so I might cook them down into ketchup, which is sweet. Our bbq sauce is vinegar based, so not sweet.

I just was not thinking when I bought these seeds. Oh, well. We won't plant this kind next year.
