I need make ahead meal ideas for my toddler

Long story short: DH was laid off from his job last year, and we've decided to have him stay at home with DS. Usually I will make all of DS's meals and snacks for the week on the Saturday before. I'll make healthy muffins, pasta, chicken, bread, jam, etc.

Today I got home from work and asked DH what DS ate today. His response: a muffin for breakfast and a roll & grapes for lunch.

I need some healthy (no refined sugar!) meal ideas that I can make ahead and refrigerate. DH won't go through the effort of thawing or reheating frozen food.

Any ideas?

I often put together a divided dish of leftovers from dinner the night before for my toddler when the older girls are at school, that way, I can make my lunch when I want and pull her's out of the fridge. The divided dish is also good for cut up veggies, hummus, some cheese... or make a meal plan for your DH of SUPER fast easy lunches -- almond butter and smashed banana sandwich... I usually try to do lots of finger foods that are mostly fruit/veggie/protein... what does your DH eat for lunch? maybe ask him what he wants to make for himself and figure out from there what the toddler will eat... grilled cheese with veggies on the side... tortillas with cream cheese and veggies rolled up keep well overnight and then cut into fun 'pinwheels' the next day... for my dd, I often pull out an organic yoghurt, some fresh or frozen berries (she loves frozen berries!) and some crackers and some kidney beans (I rinse a can and keep them in the fridge for snacks -- lots of protein!!) that's all I can think of for now... good luck!
