What on earth can i make with beets?

any cakes, cookies, snacks, desserts? we have a ton of beets in our shared garden and im not sure what to do with them

Deceptively Delicious utilizes beet puree in a number of way. Can you get your hands on a copy?

beet juice goes over well with my toddler, and hten I use the rest of the beets in a carrot muffin recipe.

I have a borscht recipe that is served warm and contains pork sausage that is super delicious!

We roast them with some fat in the oven and eat with salt.

If you have access to canning supplies, you could pickle them?

MMM, I love beets!


Pickles or beet & horseradish relish would be on my list.

And borscht. Lots of it!

beets can be really great when tossed in salads with a bunch of other veggies!

Boil the beets, like potatoes, unpeeled. Let cool. Take peeling off. It comes off very easily. Slice thin, about 1/4 inch thick. Saute in butter and add a bit of salt. Yum!

I love them roasted, especially when paired with sweet potatoes.

you can use them to naturally color a red velvet cake. never tried it but always wanted to and there are many recipes online

I make 'tye-dyed' fries by roasting or frying sweet potatoes, white potatoes and beets.

I just ran across a recipe today in Parenting magazine (the magazine makes me cringe, but hubby got me a free subscription) anywho:

Beet Hummus

Beet
clove garlic
15 oz can white beans (rinsed and drained)
juice of 1/2 lemon
1/4 cup olive oil
1 tsp salt

1)roast beet and garlic clove in foil for 45 min at 400 degrees. Take skin off beet and garlic.

2)Then blend or food process the beets the rest of the ingredients.

I haven't tried it so I'm not sure how it tastes, but it comes out a really cool color that kids would love!
