coconut oil recipe ideas to boost immune system

i was reading in another forum something that someone had posted about cocnut oil boosting the immune system...which is a great thing with the H1N1 going around....so, let's start some recipes and ideas of how to use it

the only way i use it so far is to cook popcorn: take about 2 to 3 tablespoons of coconut oil and about 3 tablespoons of popcorn and cook on medium heat level in a lidded pan until the popcorn stops popping...then i sprinkle some salt or herbmate seasoning on it.

I make coconut peanut butter balls. There was an entire thread on this somewhere. The recipe I use is equal parts CO, peanut butter or any other nut butter, some honey, cocoa powder and shredded coconut. Sometimes I grind some oatmeal and mix it in. Then put it in the refrigerator so it makes it easier to handle. Then you can form it into balls. I actually just mix it all up and make little bite size peices, sprinkle on the the coconut and put in the refirgerator for 15 minutes. They are so good. I also mix coconut oil into my oatmeal.

We also put CO in our oatmeal (along with other goodies)--it's quite tasty. :

I saute veggies in it when cooking dinner, use it in place of other oils and/or butter when I bake, use it to oil the griddle when I make pancakes, use it to spread on bread/toast/pancakes. One way my kids like to eat it is to dip a spoon in the jar and lick it off.

One thing I've found out the hard way is, if you use it as an oil to bake, make sure your other ingredients are room temp before putting them all together. I store my flour in the freezer, and if it's not warm, the CO hardens immediately when it touches the flour and won't mix in until it warms back up. The same also applies for using milk, eggs, anything cold with the CO. But, I do like the fact that CO hardens when I make scones, sugar cookies, or anything where you "cut" it in to get a crumbly texture.

I've actually not found a bad way to eat CO yet! Can't wait to see some other ideas...

I started using the CO exclusively for cooking unless I'm frying something then I use EVOO. It makes white rice soo yummy! Especially if you also add in a bit of coconut vinegar to the water.
