There are many terrific ideas on this thread. I'm definitely going to bookmark this one. I'm in a rut already, and I've only packed 23 lunches (four weeks of kindercamp and three days of kindergarten.) My son will love some of these.

I'm going to start doing a bunch of different wraps. We've done peanut butter/honey and turkey/cheese/veggie ones. My son loves bacon, lettuce, tomato, sprout wraps. I bet they'd be great in his lunch. He also really likes hummus sandwiches.

Anyone done quiche for lunch?

I have access to a microwave, so I am having left over sloppy joes tomorrow (with diced colored peppers), and gelatin that I just made with strawberries in it.

Anyone done stuffed peppers cold?

I have sent quiche both for snack and for lunch. I make a ww crust, or sometimes do crustless. Usually I do some sort of green veggie and cheese. If there is access to a microwave the quiche will get heated, otherwise they eat it cold. We have also been known to have quiche for breakfast!

I haven't done stuffed peppers, but I have sent stuffed grape leaves, which have been a big hit. They are easy to pack, and easy for the kids to eat. California rolls are good also.
