can anyone give me a guideline on vinegar/sugar proportions for pickling beets? how much of each per pound or so of beets? i would probably stick a cinnamon stick into each quart, as my favorite farm stand does, but not more spice than that. i plan to do a simple refrigerator pickle until i can get a live-in-person demo on canning. we eat them so quickly, they don't need to keep more than a couple of weeks anyhow!

i am utterly overwhelmed by my internet search for refrigerator pickles. one recipe seems to contradict the next....
