Would a vitamix blender affect the glycemic index?

I know that easier to digest foods tend to spike the glycemic index, so does putting veggies through the vitamix increase the glycemic index? In theory, ground wheat (and you can grind wheat in the vitamix) has a higher glycemic impact than whole because your body doesn't have to work to get through the outer husk. So, following that logic, does it do the same things to things like kale and blueberries? (those are the most common ingredients in my smoothies) One of the reasons I can eat kale now is because it isn't as hard to eat if I beat it to a pulp, but I need to start eating to cater to my insulin resistance, and I need to know if this is still a good option.

Any insights?

eta: the reason I asked about the vitamix specifically is 1) because that is what I have, and 2) it really disinigrates food in a way that very few blenders can.

I dont have a viatmix - I think what makes the difference is if the fiber is out - does vitamix leave behind all the pulp like other juicers? For instance, I can't drink carrot juice, but I can eat a carrot....

I haev Type 1 diabetes.
