First Birthday cake

Hello,

My son is turning one today, I cannot believe it. It has been a rough year and I am thankful for the support that I have gotten here.

I am looking for a recipe that I can make but lots have eggs (maybe I can leave out the whites), milk, oil, etc.

I have carrots, bananas, can make apple puree. Does anyone have a good recipe for a preemie first birthday cake/ muffins? (He was over 10 weeks premature.) Thanks.
