Avocado mayonnaise

Okay, for those mamas who can't use eggs but can use avocadoes, do you have a favorite avocado mayo recipe that you'd like to share? I want it specifically for making tuna and chicken salad, if that makes a difference.
TIA!

(Our other restrictions are: wheat/gluten, dairy/casein, nuts, peanuts, coconut, and soy... Oh and berries although I can't see that effecting this. )

In The Whole Foods Allergy Cookbook, Pascal has a recipe:

1 ripe avocado
1 tbsp safe milk
1 tbsp lemon juice
1 tsp Dijon mustard
pinch of paprika
salt to taste
dash of hot sauce (optional)

mash avocado and stir in other ingredients or throw it all in your blender/processor. Use within two days.

I make mine very simply: 3 avocados, lemon (to taste - I usually use 3-4 tablespoons), garlic (again, to taste, I usually use 1-2 cloves), salt (again to taste, lol). And that's it. I know it sounds really simple, but it is SO GOOD.

It's also dangerous. I can just eat the whole thing with a spoon in one sitting. Dangerous, I tell ya.

Really? I've never heard of avacado mayo before. Baby #2 screams if I eat eggs, and mayo is the only thing I REALLY miss.

I call this guacamole

but really yum. I thought i was the only who likes ot use smooshes avacados as a replacement for mayo!
