Modifying flour recipes?

How do you modify a white flour baked recipe so that you can use whole wheat, or whole grains instead? I know you're not supposed to knead whole wheat as much, and that it doesn't bond as well as white flour. I'd like to turn my cookie, biscuit, cake, bread, and roll recipes into healthy ones.

I just sub whole wheat pastry flour. In yeast goods, I tend to need either less flour, or a little extra liquid.

the general rule is 7/8 cup whole grain flour to substitute for 1 cup white flour. In the bread/yeast recipes you may want to add about 1/4-1/2 cup wheat gluten as it makes the bread softer. HTH!
