what do I do with corn that is past its prime?

I ended up with a bunch of corn that is starting to look a little dehydrated. Is there anything I can do with this stuff?

I'm wondering if you could freeze it? Use it for soups and stews over the winter. Or try dehydrating it, then grind it and use it for muffins and cornbread.

Or just cut the kernels off and dehydrate. Can reconstitute in soups and such later on.

Make creamed corn -- slash the kernels down the rows with a knife, scrape out the milk, cut the kernels off and simmer.

Cut kernels off cob, cook in bacon fat with some diced onion.

Make cornbread and put whole fresh corn kernels in the batter.
