I just picked my first ones today. We're going to be making some salsa verde tonight. We have never tried it before, but I can't wait.

Anyone have any other great ideas for all these tomatillos? There are tons on the one plant I have.

Tomatillos are yummy! They have a slightly spicy almost lemony taste. If you roast them they are abit sweeter. I love to add them to salsa, especially mango/avacado salsa. Heck they're great in any sauce or fresh chopped and added to a salad. Use them anywhere you want a little zip.

My mother makes a chilled tomatillo soup that is divine. I'll have to see if I can beg the recipe from her.

White bean chicken chili. My fave!

Last year, I bottled tomatillos whole. They were awesome to puree and pour over chicken in the crockpot with some chiles and onion.

I love making chicken en salsa verde with them, they make a great sauce for just about any meat and even form tofu.
