What do you ladies use to substitute egg?

If you sub what do you use? I tried 1 tbs corn starch to 3 tbs water but in a couple recipes but it didn't seem to work well. Help?

1 Tbs. milled/ground flax + 3 Tbs. water, microwaved on high for 1 minute or set out for 10 minutes. Will gel up like an egg white. In anything that calls for more than 1-2 eggs, it won't work very well.

I use 1 package gelatin +1 T cold water + 2 T boiling water, mixed to frothing or flax eggs, like Kathy. These are great for simulating the *binding* properties of eggs.
The starch sub you were/are using is great for when you need the *thickening* properties of eggs.
And for anything which needs the *leavening* properties of eggs, I add an extra 1/4 t baking powder along with my flax or gelatin eggs.

It depends on what is needed. I estimate that an egg is about 1/4 cup

Sometimes I use straight applesauce. This makes yummy pancakes.

For anything that needs to rise and stay that way I use
1 TBL soy powder (DD is also allergic to milk, you could use whey powder if that's not a problem for you)
1 TBL oil (usually olive oil but it depends on how much flavor everthing else has)
The rest of the 1/4 cup is filled with either applesauce, soy milk or water.

If there's oil elsewhere in the recipe I might leave it out of the egg sub. Oil of some sort seems necessary to keep crisp cookies from getting too brittle.

I'll have to try the geletin. The soy powder we got has vanilla flavoring which is fine for most baking especially if chocolate is involved but it would be nice to have a flavorless alternative.

I just bought gelatin today! Go figure it was something I just bought on a wim thinking I'd use it for something for the girls. I will definately try that one Jaqueline!

I don't have a microwave, you think stove top would get the same result?

I'll have to try applesauce too

Yeah, we are no egg, dairy, soy or gluten. For the moment. definately soy and dairy, but I think its either egg or gluten but we're waiting for her bowels to get right before adding one back in. But they are definately doing better!

You can get the same effect from ground flax just by using hot water rather than microwaving. So 1 T ground flax + 3 T hot water mixed and then allow to sit for about 5-10 minutes.
There's also flax goop which can be used anyplace you need the binding of flax without the texture.
Take 4 teaspoons whole flax and soak for 1 hour (or more) in 1 cup of water. Simmer for 20 minutes, allow to cool and strain out the flax seeds.. A scant 1/4 cup of this is equal to 1 egg.

As Masel said, you can also use applesauce or 1/2 a mashed banana.

And, of course, if all else fails you could try Ener-G Egg Replacer.

i did flax and bk pdr in banana bread it didn't cook. the outside crusted but the inside didn't cook what did i do wrong??

I can't tell you what you did "wrong" but I can sympathize. I remember having *exactly* the same experience when I first started out gluten, dairy and egg free. I still don't know what *I* was doing wrong.

I picked up some ener-g.... It has citric acid in it which I think DD2 has a problem with as well, but we will try it and see.......
