need egg brunch recipe help

I wanted to make an egg casserole (dont tell DD, if we say casserole she wont eat it!) today to have for visitors tomorrow. It calls for bread on the bottom, 6 eggs, milk, cheese, mustard, and meat. Do you think I could replace the bread with mashed potatoes? I have a ton of mashed potatoes and I forgot to prepare the flour for bread today, so I wont have bread in time to prepare the dish and then let it sit in the fridge for the required aount of time. I know that without the bread it probably will not come out in a nice little square, but other than that do you see a problem with the taters???

I have a recipe for a low fat quiche that rather than a crust uses mashed potatoes (I haven't tried it). It calls for you to use 2 cups of mashed potatoes on the bottom and sides of the pie plate and you pour the quiche filling on it and bake as a normal crust quiche. So yours seems like it would work out fine. I'd probably not make the layer too thick, so that it will come out more easily.
