I need inspiration! I have just exhausted my meal stockpile and I am really glad that I had what I had--I strained my back and couldn't do much cooking for about a week, so we dug in the freezer and ate everything I had prepared previously and frozen. Now I am working to rebuild the supply because it is so nice to have all that food on hand when I am desperate!
Here is what I have 'rebuilt' this week:
marinated salmon (froze half of salmon recipe I made for dinner)
marinated chicken thighs (same thing)
1 large and 3 small whole wheat banana breads (we were drowning in brown bananas!)
I also want to make the following:
Bone soup (use to cook or as base for other soups)
Minestrone
Quinoa soup (got recipe here on MDC)
Whole wheat Apple cake--like coffee cake (have cooking apples from CSA, need to use, but aren't v good for eating, plan to split 9x13 recipe between two small pans to have 2 cakes)
Lasagna (I freeze it in individual portion sizes)
Quesadillas (I fold refried beans and cheese in whole wheat tortillas, freeze, then heat for a fast lunch)
What do you like to have on hand?
