Purple potatoes?

Okay, what do I do with all these purple potatoes I'm getting thru my CSA? So far I've diced them, mixed with white potatoes, and roasted them in olive oil, salt and pepper. They turned out okay, nothing special. I guess I am having trouble getting past the purple part to use them as regular potatoes. Is there a way to prepare them that brings out their good qualities?

Honestly, I've never really noticed a flavor difference.

I'll tell you what NOT to do though - don't mash them. They turn an un-appetizing color. Much better off in roast/fried applications.

This is a really good recipe. I've also changed it up a bit by dicing and sauteeing proscuitto to make it crispy and mixing it in. It's also delicious if you do a warm vinaigrette.

Weird, I have never had my purple potatoes turn unappetizing colors when mashing! They are simply WONDERFUL mashed with cilantro and garlic! Soooo yummy! :

You can just basically use them in any recipe in place of white potatoes.
