Help me make my own!

We are using raw milk and have made butter and yogurt, I just found recipes for cottage cheese, ricotta and cream cheese. I would like to try mozzarella too. Does anyone have an easy recipe?

Also, I've tried making flour and corn tortillas borrowing my mom's press and both were a disaster! The corn tortillas were wet grit that did not hold their shape after being pressed and just crumbled off of the wax paper. The flour shells were very pancake like and definitely not foldable. Any tips?

For tortillas - you have to get the corn dough to the right consistency, which is not as easy as measuring X amount of corn, Y amount of water. You have to be able to pick some up, squeeze it together and have it hold without liquifying. If it crumbles, too little water, if it liquifies, too much. It also works better if you let it sit at least 15 minutes after mixing before pressing. Also, don't try to peel them off the paper raw - peel off one side, slap it onto a hot griddle, let it cook 30 seconds or so before trying to peel it off - it tends to work better.

For flour, I've found rolling to be more effective than pressing. They still tend to be thicker than store-bought, but I have more control that way.
