So I want to make some hawthorn berry and rosehip conserve but I don't have access to fresh...I would be using the dried berries. How would I can this? Is it doable?
I may just freeze it but I would like to can if possible since freezer space is an issue (it's a watch your toes when you open it kinda thing.
Thanks!

Sure it's doable. Just soak or simmer them first so they soften up. Keep the soaking water and use it for the base of the jam.

I made jam with dried apricots and fresh pineapple a few weeks ago - came out beautifully.

But I highly recommend finding/using Pomona's Universal Pectin on recipes like this when you don't really have a recipe - it's less fiddly. And learn the gel test so you know when it's done.

Thank you! Is Pomona's pectin something I can find at an area store or is it found online?

I find it at Whole Foods, or any number of small independent "crunchy" stores.
