Really great GF pie crust?

Needs to also be nut, dairy, soy, coconut, peanut and egg free.
I'm so wanting to try this pie but I need a really good gf pie crust. I've tried a few from the internet (don't ask which ones, I can't remember) but they've all failed to impress.

What about a cookie crumb crust sort of thing? Like a graham cracker crust with safe cookies?

What fats or oils can you have?

Olive, canola, palm, safflower, sunflower, corn...
Anything besides butter/ghee, soy oil, coconut oil, peanut and nut oils are safe.

I'd really prefer a pastry-type crust to a cookie crust.

In that case, I've got nothing. I'm still looking for a good pastry crust with only half those restrictions. Haven't been looking very hard though.

Maybe a tapioca glue/buckwheat pete sort of thing?

I wonder if gelatin would work in place of eggs for a pastry recipe... Maybe I'll give that a go sometime in the near future.
